Quinoa or Chilean hake is a pseudo cereal that is naturally gluten-free. It is native to South America, where the ancient Aztecs and Incas considered it sacred and the 'mother of grains'. Nowadays it has become a trend in healthy eating and should be part of a balanced diet in every household. It contains large amounts of protein and fibre, a balanced amount of amino acids, and a wide range of vitamins and minerals (A, B, C, magnesium, calcium, iron, phosphorus, manganese, copper, zinc). Good for burning fat and excellent for digestion.
It is suitable for many types of dishes, used as a side dish and as part of the main meal. It can be combined with vegetables, meat, but also with dried fruits (plums, apricots, cranberries) or nuts (almonds, cashews, Brazil nuts) and seeds (flax, chia, sunflower). It also tastes great with legumes, where together they form a very nutritious combination. For an even better taste, use vegetable or chicken stock instead of plain water, but also herbs, onions and garlic.
We recommend rinsing well before cooking, preferably in a sieve, to avoid a bitter taste. For one cup you need about twice the amount of water, but you will get almost three times the amount of quinoa. Cook like rice until the water evaporates, about 15 to 20 minutes.
