Pistacia is a roughly 10m tall and about 30m wide shrub that probably once grew wild in the arid regions of central and western Asia. Pistachios are also cultivated in Southeast Asia and the Mediterranean, where they arrived in the Middle Ages. Since the mid-19th century, they have also been cultivated in California.
The fruit of the pistachio, the pistachio nut, is a beige shell that hides a kernel that can be yellow to various shades of green. The shells grow on the trees in clusters. When the shell ripens, it bursts lengthwise at the junction. However, if it has unfavourable conditions during growth, the shell does not burst.
The greener the fruit, the better the quality. The kernel is still covered by the red skin, which is easy to peel and has a characteristically sweet taste. The kernel itself also has a sweet taste and a characteristic aroma.
On average, pistachios have 55% oils, 20% protein and 15% sugars, making them an extremely valuable food.
They contain potassium, magnesium and calcium, vitamins A, B, E, iron, copper, selenium and zinc and other powerful antioxidants.
Uses:
The use of pistachios is versatile, the kernels are eaten fresh, roasted, salted or otherwise flavoured.
Fresh pistachios are used to make ice cream.
There are also desserts such as baklava, a Mediterranean recipe made with puff pastry and super-sweet pistachio or almond flavoured fillings.
In our country, the most famous are roasted salted pistachios, which we peel from cracked shells. The pistachio fruits are green, yet sometimes black if they have been pickled in salt and lemon before roasting. Unsalted pistachios can sometimes be found and these are suitable for use in sweet dishes.
